Состояние, при котором у человека очень неприятный запах изо рта, называется галитоз. А источником запаха могут быть сразу несколько летучих соединений. Одно из таких соединений - это газ метан. Его даже иногда добавляют к природному газу, чтобы можно было сразу почувствовать утечку.

Отвечают за его производство, разумеется, бактерии, проживающие на спинке языка и вместе стыковки зуба с десной, пародонтальном кармане. Наличие этого газа в клинической практике сигнализирует о пародонтите. Интересно, что метан и сам вредит тканям, поэтому получается нечто вроде положительной обратной связи: пародонтит вызывает выделение газа, а он усиливает пародонтит.

Но до недавнего времени мы и понятия не имели, какие бактерии в каких процессах производят метан. Среди крупных производителей метанола оказался тандем из палочки Плауты, грамм-отрицательной бактерии, и одного из видов стрептококка. Механизм взаимодействия тоже определили: стрептококи выделяют аминокислоту орнитин.
