Оказалось, что красное вино иногда действует по тому же принципу, что и препараты, призванные вызвать отвращение к алкоголю. Дело тут в полифенолах, которыми богато красное вино. Более конкретно, флавоноид нах полифенолов, которыми богата виноградная шкурка и которые вносят вклад в цвет вина.

Так-то полифенолы встречаются в природе повсеместно. Это антиоксиданты, обладающие противовоспалительными свойствами. Но вместе с большой пользой приходит и большая проблема с метаболизмом алкоголя. И если про большую пользу здесь для красного словца в основном сказано, то вот проблемы действительно есть.

Дело в том, что один из флавоноидов, кверцетин, присутствует в красном вине в самых больших количествах из всех алкогольных напитков. В организме человека он преобразуется в кверцетин 3-глюкуронид. А уже он оказывается воздействует на фермент печени, альдегид дегидрогеназ, ингибируя её. В норме этот фермент помогает разложить ацетальдегид и вывести токсин наружу.
