Growing up out in this part of the world, virtually all the old-timers put up their fish in jars or cans. My uncle had a tin can, or my dad's mom had a tin can for quite a while. There was a way of life back then; we gave it a little bit of olive oil to tune it up a bit.

I'm fortunate enough that I lived that way myself, that I know how to do all that stuff. When the oxygen in here gets hot, it leaves again. When they cool down, it creates a vacuum, either really destroying all the bacteria.

A lot of people that have lived out here for a while kind of take this lifestyle for granted, but it's fragile, you know? It could end with just a minor event. I'm really happy that I've been able to enjoy it, and to me, it's paramount that we take care of our resources so people can live like this out here.

That way, now it's a waiting game. They're sealing; see that a little bit of cool air got to them, and so I can just touch the tops, and they go pop, pop, pop. Nice stuff! There we go; I'd call that white and gold for wintertime.
